Well, unless you have personally modified the original skin, there is no reason to save and keep the default skin, as this will be reinstalled at any subsequent image update.
Moreover, consider that the default skin is generally improved at any new image release, so this is a further reason not to keep the previous version.
Finally, the old skin might not be even fully compatible with a new image release.

Most of new skins you can reinstall from the Image Server,
not as the default skin but as an extra skin.
It does not change a thing.
But you can copy default skin,
from /usr/share/enigma2/skin_default <all Folder and sub folders
and you have to copy skin.xml and prev.png files from /usr/share/enigma2/
The problem arises as said colleague @Eragon
with updates and changes in the image coding.
In this case, it can happen to bring down/crash image.

If you personally modified the original skin.xml, I sugest you merge your modifications with the updated skin.xml to avoid crashes and problems. Of course you need to have backups. It's easy if you know how to mod skins, and you even can use software to compare files for easily see what's changed...
